Hash Browns

  • 2 lbs. (32 oz.) hash brown potatoes frozen (thaw about 30 minutes)

  • 1 can [size?] cream of (chicken/celery) soup - DON'T DILUTE

  • 16 oz. sour cream

  • 8 oz. (1 stick) butter, melted

  • 8 oz. sharp cheddar, grated

  • Potato chips or corn flakes for crust

  1. Preheat oven to 375F.

  2. Mix all ingredients together in 9x13 pan.

  3. Sprinkle crushed potato chips or corn flakes on top.

  4. Bake for 60 minutes.

Hash Patty

Serve with ketchup.

  • Leftover mashed potatoes [missing quantity]

  • 1 egg

  • Salt and pepper to taste

  • Onion or shallots, diced

  • Leftovers to mix in (i.e. meat, roast beef)

  • Flour

  • Oil

  1. Place mashed potatoes in a bowl. Add egg, salt and pepper, diced onion/shallots, and any other mix-ins.

  2. Form patties and roll in flour.

  3. Fry in regular oil on medium heat, flip once.

Egg & Cheese Strata

  • 10 slices of bread

  • 2.5 cups grated cheese

  • 4 eggs

  • 2.5 cups milk

  • 1 tsp salt

  • 1/4 tsp dry mustard [powdered mustard seed?]

  1. Trim bread crusts, butter bread and cut into quarters.

  2. Butter dish, layer bread & cheese in 2 layers.

  3. Beat eggs, milk, salt, and dry mustard. Pour over bread & cheese, cover 6 hours / overnight.

  4. Preheat oven to 325F and allow strata to sit at room temperature. Bake uncovered for 45-60 minutes until firm in center.
