Mahoney Onion Dip

Goes well with Wheat Thins. Yield amount.
2-3 sweet onions or Vidalia onions when in season (mid-April to early September)
1 package shredded Swiss cheese [missing quantity. 8oz?]
1 package shredded cheddar cheese [missing quantity. 8oz?]
1 cup mayonnaise
Garlic salt to taste
Preheat oven to 350F. Mix all ingredients together. [missing how to mix? how to prep the onions?] Add garlic salt.

Alaskan Salmon Dip

Goes well with Saltines. Yield amount.
2 cups salmon, drained
1 Tbsp lemon juice
8-oz package cream cheese, softened
Suggestion: Borden's Eagle Brand Neufchatel or Philadelphia Cream Cheese
2 tsp chopped onion
1 tsp prepared horseradish
1/4 tsp salt
1/4 tsp liquid smoke
1/2 cup chopped pecans
Parsley
Drain and flake salmon, then mix all ingredients together. Chill for 30 minutes.
Shape into a ball or log and roll in more nuts or parsley.
Green Pepper Jelly

Yields about 4 half-pint jars.
6 large green peppers, cut in pieces (2 cups)
6 cups sugar
1/2 tsp salt
1.5 cups cider vinegar (4-6% acid strength)
1 tsp crushed red pepper
1 bottle [size??] pectin
Green food color
Place half the green peppers and half the vinegar into blender and liquefy until pepper is liquefied, pour into saucepan. Repeat with remaining peppers and vinegar.
Add the red pepper, sugar and salt. Bring to a boil and add pectin. Continue to boil until it thickens when dropped from a spoon, about 2-3 minutes. Add a few drops of green food color.
Pour into sterilized jars, leaving 1/4-inch headspace, and seal.
Spaghetti Sauce

2 large cans tomato puree
Contadina brand
1 small can tomato paste
Oil
2 onions
1/4 cup parsley flakes
Garlic powder
Nutmeg (pinch)
Italian seasoning
Sweet basil
1 tsp sugar
Simmer 2 onions bottom of pan of oil add puree and paste.
Add seasonings, 1 tsp salt, and 1/2 tsp pepper.
Simmer.
